I LOVE German Pancakes.
They are a really simple breakfast, especially for Summer mornings. You can tell it is not really healthy just by looking at it -- so it is a sometimes food. I highly recommend adding fruit, like strawberries, on top. (That makes it healthy, right?)

I also discovered that you can add different flavors of Coffee-mate to things like German Pancakes and French Toast (add to the batter) for a little different flavor. Don't pour in too much, but a little can be yummy. I ran out of milk and had to use the powdered kind (which I think tastes nasty), so I added a little vanilla-carmel Coffee-mate to the batter, and it turned out really good. (Pancakes pictured above.) The kids LOVED it. I have even put Coffee-mate in brownies, and that was yummy, too. (The coconut kind, my favorite!) I have never tried some of the more exotic flavors . . . maybe around Christmas I'll have to try adding Eggnog or Pumpkin Spice. (Why am I thinking about Christmas today?) Weird?
Note: I do not drink coffee. I am Mormon. My kids freaked-out the first time I brought Coffee-mate in the house. Can't they call it Hot-Chocolate-mate, or something?? :-)
Note 2: Breastfeeding makes me want sugar, a lot. Why is that? I know, I know, hormones. But why can't I crave broccoli, or asparagus?

Ingredients
Directions
Place the eggs, milk, flour and salt in a blender; cover and process until smooth. Pour the butter into an ungreased 13-in. x 9-in. x 2-in. baking dish; add the batter. Bake, uncovered, at 400 degrees F for 20 minutes.
*If you don't have a blender you can mix it by hand

I've heard it called Dutch Babies, but that never made much sense to me. "German Pancakes" sounds better. One of my kids asked for this recipe yesterday and I realized we haven't made it in a while. I'll have to try the Hot-Chocolate-Mate idea. ;o)
ReplyDeleteI love those, especially how easy and tasty they are! You have to try them with a homemade buttermilk syrup or homemade coconut syrup too. Yum! Sadly Tyson doesn't agree with my love for German pankcakes. He is such a breakfast snob.;) It has to be really hearty for him like pancakes, eggs and sausage...maybe some steak on the side.
