Yummy Muffins!!

Success! I had muffin success! I have never made yummy muffins before. I would always try to make them without paper muffin liners (I would just use spray) and they would always stick to the pan. I learned my lesson! Anyhow, I had my first success! These muffins are SO yummy! Dangerous yummy!

Chocolate and Butterscotch Chip Muffins
Ingredients:
Muffins:
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1 cup sour cream
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup semisweet chocolate chips
1/3 cup butterscotch chips
Topping:
2 tablespoons semisweet chocolate chips
2 tablespoons butterscotch chips
2 tablespoons brown sugar
1/4 cup chopped pecans ( I did not add the pecans -I don't like nuts!)
Directions:
In a large mixing bowl, cream together the butter and sugar until smooth. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla and mix well. In a separate bowl, combine flour, baking soda, baking powder and salt; add to butter mixture and stir just until moistened. Fold in the 1/3 cup chocolate chips and 1/3 cup butterscotch chips. Fill paper-lined muffin cups 2/3 full. In small bowl, combine topping ingredients. Sprinkle topping mix evenly over each muffin. Bake at 350 degrees F. for 25-30 minutes or until golden brown. Cool for 5 minutes in pan. Remove from pans and place on wire racks. Serve warm or cool.
Number of Servings: 12 muffins
They are amazingly good!

Thomas the Train
William had never seen a Thomas the Train movie before. I thought I would give him a thrill! I put it on the projector, his eyes opened wide, and he said, "CHOO, CHOO!" He was SO excited!
CHOO-CHOO!!!
